I love bread rolls. I love carbs. I do my best to limit the number of rolls I sneak onto my plate during a dinner setting that provides limitless baskets of bread. I love bread that is free. If you are a home cook or simply someone trying to find a great bread roll recipe, look no further. I got you.
This recipe evolved from my favorite soft wraps. I found that the magical ingredient that both recipes used really boosted that soft roll feel. These rolls go perfectly and deliciously with some soft butter and a soup or some type of dish that has a hearty sauce. They are also super easy-peasy to make.
You will need your usual cast of yeast and warm water with the addition of warm milk. Again make sure the water and milk are about 105 degrees farenheit, or at least medium hot to where you will feel a slight discomfort if you stick your finger in it. Shouldn’t burn you, but it should feel very warm. Once your yeast/water/milk has sat for about 5 minutes, sprinkle in the sugar. Yeast loves sugar.

Alright, you can use your hands to mix all of these together, or if you have a stand mixer, use it. 🙂 Pour in the melted butter at this time as well.
Let all the ingredients come together and form a dough. You will know that its ready when no flour is laying at the bottom of your bowl. If you feel the dough is too dry, add a little more warm water. If it is too sticky, add flour in tablespoons at a time. 🙂
Once your dough is ready, oil up a large bowl with some non-stick spray and cover. Let it rise in your turned off oven or other place free from air draft for 60-90 minutes (I always do 90 minutes because that simply means I have more time to work on other things like the main meal or tidying up).
Once the dough has risen, lay it out and using a cutter, split the dough in half and split each of those halves into 8, forming each piece into a ball. The original recipe asks for 2-8″ pans but I only had 9 “.
Once you got them all rolled up, cover ’em with some plastic wrap and let rise in that turned-off oven for another 40-50 minutes (again, I chose the 90 minutes to probably watch some Sex and the City). 😛
Once they have gone through that last rise, take them out and AWAY from the oven. Preheat the oven to 350 degrees farenheit. Once your oven is preheated slip the rolls in and bake for 22-25 minutes, or until golden brown.
While they cool, melt some butter and brush them up. Let slightly cool before serving (if you can wait that long).

2/3 cup warm water
½ cup warm milk
2 tsp yeast
2 tbsp sugar
3 ½ cups flour
¼ cup instant potato flakes
3 tbsp nonfat dry milk
4 tbsp melted butter
2 tbsp melted butter (for topping)
Proof your yeast in a bowl or small measuring cup with the warm water and milk mixture (around 5-7 minutes or until beginning to foam)
Sprinkle the sugar on top. In a separate bowl gather your flour, potato flakes, and dry milk powder.
In a stand mixer or by hand, mix dry ingredients with the yeast mixture. Add in the melted butter. Mix until the dough comes together into a smooth ball and there is no flour sitting on the bottom of your bowl.
Oil your bowl using non-stick spray and let your dough rise for 60-90 minutes.
Prepare 2 – 8″ round pans by spraying them lightly with non-stick spray.
Once your dough has risen, layout and split in half using a pastry cutter, a knife, or your hands. Split each halve into 8 pieces and roll each into a little ball. Set them into the pans, leaving at least an inch of space to prevent them from getting too close together.
Let them rise and cover with plastic wrap. Again, 45-60 minutes.
During the last 10-15 minutes of the rise time preheat your oven to 350 degrees farenheit (I always set 2 alarms, one for the rise time, and another for when I should preheat the oven).
Let them cook for 22-25 mins or until golden brown. Brush with remaining butter.
